Coconut Mango Oats
Inspired by mango sticky rice, this sweet and nutritious breakfast will be the perfect start to your day!

- 1 1/3-2 cups light coconut milk Based on your preferred consistency - use 1 1/3 if you prefer a thicker oatmeal consistency
- 2/3 cup rolled oats
- 2 tbsp chia seeds
- 6 tbsp shredded coconut, unsweetened
- 2 tsp vanilla extract
- 2 tbsp maple syrup (optional, can add more if you prefer a a sweeter oatmeal)
- 2 ripe mangoes, chopped
Add oats, chia seeds, shredded coconut, maple syrup, and vanilla to a small saucepan.
Add 1 1/3-2 cups of light coconut milk, stir to combine, and bring everything to a boil.
Once boiling, reduce to medium-low heat and continue cooking for 3-10 minutes until creamy and desired consistency is reached.
Remove from heat, and top with chopped mango. Garnish with shredded coconut and extra coconut milk. Enjoy!
