Method
- Add oats, chia seeds, shredded coconut, maple syrup, and vanilla to a small saucepan.
- Add 1 1/3-2 cups of light coconut milk, stir to combine, and bring everything to a boil.
- Once boiling, reduce to medium-low heat and continue cooking for 3-10 minutes until creamy and desired consistency is reached.
- Remove from heat, and top with chopped mango. Garnish with shredded coconut and extra coconut milk. Enjoy!
