A mango sticky rice-inspired (oat)meal. We couldn’t think of a better first post than a recipe that combines prominent flavors from our childhood. The coconut milk provides a creamy base, which can be adjusted for the perfect oatmeal consistency. The added chia seeds and shredded coconut contribute to the texture, perfectly pairing with the juicy mango and chewy oats to make a healthy and satisfying start to your morning. (P.S. We would highly recommend using champagne or autalfo mangoes for this recipe, we find them to be the sweetest!)

Coconut Mango Oats

Inspired by mango sticky rice, this sweet and nutritious breakfast will be the perfect start to your day!

Ingredients
  

  • 1 1/3-2 cups light coconut milk Based on your preferred consistency – use 1 1/3 if you prefer a thicker oatmeal consistency
  • 2/3 cup rolled oats
  • 2 tbsp chia seeds
  • 6 tbsp shredded coconut, unsweetened
  • 2 tsp vanilla extract
  • 2 tbsp maple syrup (optional, can add more if you prefer a a sweeter oatmeal)
  • 2 ripe mangoes, chopped

Instructions
 

  • Add oats, chia seeds, shredded coconut, maple syrup, and vanilla to a small saucepan.
  • Add 1 1/3-2 cups of light coconut milk, stir to combine, and bring everything to a boil.
  • Once boiling, reduce to medium-low heat and continue cooking for 3-10 minutes until creamy and desired consistency is reached.
  • Remove from heat, and top with chopped mango. Garnish with shredded coconut and extra coconut milk. Enjoy!
